Nutella, Lemon & Strawberry Shortcake

It's been an "Odds & Ends" kind of week :) 



My youngest moved into College this week.  I thought that would make life very quiet.  But I've been out to take her some stuff once, she drove home once and will be home this weekend already :)  I'm completely fine with that! 

In order to accommodate all the running around baking was a hodge podge of whatever needed to happen.  The Strawberry Shortcake cake was for a little girl turning 6 years old - she got to celebrate while taking chemotherapy on her birthday. She was a sweet little angel and I feel blessed to have been able to do anything that made her day a little brighter.


It's amazing how much Pinterest helps with motivation on weeks like this too!  Whenever I see Nutella in the title I have to check it out since it is such a staple in my home.  The cookies were delicious, even though I only got to steal a couple from the bag I sent with Audrey when she moved.  They were super easy too with only 3 ingredients: 1 cup Nutella, 1 cup flour and 1 egg! 





These lemon bars were because, well, I wanted some.  Sometimes there really doesn't have to be a good reason to bake some goodness :)  I also have some extra cake mixes that I need to find a way to use.  I like making cakes from scratch so the mixes are a good way to experiment with other stuff.  These were made by using a lemon cake mix and then a mixture of eggs, sugar, lemon juice, lemon peel, baking powder & salt.  I am trying to be good with keeping my weight down - but these kind of goodies for no reason, whew, not helping too much!  My husband asked if I was trolling for teenagers since Audrey is coming home.  That wasn't my point but they are definitely going back to the dorms with her when she goes or I'm in trouble.
